I think you could take the 290 miles and divide by the total gallons used to fill up your tank and get your MPG, provided the last time you filled your tank entirely as well.

Keeping my distance in traffic
I'm not saying it's easy, but it would work.
Also, I would definitely say New Jersey is impossible to maintain any form of distance and add to that try avoid stepping on the pedal.

Any way to account for missed fuel ups?
Couldn't you just guesstimate it? Shouldn't affect your overall data if you just put an average amount in there.
