whats a good temp to let my cooling fan come on with these colder temps

95 jeep cherokee 4.0 auto, Now its getting colder here in pa i have an adjustable cooling fan not a clutch belt fan. it is adjustale from 140 to 230 degrees. i have a 195 thermostat which is jeeps highest thermostat from factory.

Any recommendations i have a infa red temp guage handheld to monior actual temps all over under the hood what do you think.
