Uncle Mike's Summer Salad

Uncle Mike's Chicken/Noodlee Summer Salad
Feeds a Mob. Serve hot or cold.


Cook:

1 17.6 (500g) hollow noodles
Drain and add
salt & pepper and 1/2 cup Extra Virgin Olive Oil and 3 drops of Dynasty seasoned Sesame Oil
Mix and refrigerate to stop cooking


In a mixing bowl, add:

1 medium red onion, minced
1 slice (1/4 of) Dill Pickle, minced
1 tablespoon garlic, minced
1 cup shredded Cheddar Cheese
1 cup Nibblets corn
2 shakes of Dill Weed
1/4 teaspoon of Celery Seed Powder
1 tablespoon Italian Seasoning

Mix well then add:

3 cups Four Bean Salad, drained.
I used Paisley Farm Four Bean Salad from Costco. It gives a clean and sweetish taste.

Add to the Noodles. Thoroughly mix. Set aside to let flavors blend.

The Chicken:
I used two Costco BBQ'd chickens.

Remove and save two breasts for other meals.

De-skin, de-fat, de-ickify all other chicken meat
cut into 1 inch cubes
Stir the noodles and then add and mix in the chicken.

Stir before serving.

YUM!

If I had celery I would have added 6 or so of the center stalks, minced.
If I wasn't lazy I would have added fresh French Beans, cut small.
Fresh mushrooms at serving might be fun.
I would have used more of a sweet onion.
Chives? Green Onions? Why not.
