Tips to restart logging after a year long break?

I haven't used fuelly for a year, or two, and since my situation has changed I would like to start again.

Any tips? Is there a "best" way not to mess with the old stats or should I just start logging?

Since both of your vehicles are set to track by the odometer reading, you need to do this:

Next time you log a fuel entry on each vehicle, check the box that says "Missed fuel up?" This will tell Fuelly to start the calculations fresh starting at that point.

Could they also not switch method of fuel tracking to "odometer reading" and just input the trip mileage/fuel used that way from then on?
