Drive by wire, 8000 miles huh? The only thing I can think of would be to reset the ECU...

Actually, I finally figured it out, once I observed the conditions better and reproduced it more accurately. I got the timing pretty perfect and realized that it's preventing >3000rpm on startup; if I just let the tach rise then fall a few hundred RPM then it's all better. So, my procedure is this:
Normal bump start
Accelerate to 3000 rpm fuel cut
Let off the gas and on the clutch for a few seconds until it revs down to 2700rpm (thanks, rev hang)
Resume driving without further difficulty
